How to Apply Your Dry Rub
- Prep the Meat:
- Pat it dry: Use paper towels to remove any excess moisture from the meat's surface. This crucial step helps the rub adhere properly and creates a better crust.
- Apply a binder (optional): For an even coating, especially with larger cuts or for smoking, spread a thin layer of mustard, olive oil, or another preferred binder over the meat before applying the rub.
- Apply the Dry Rub:
- Coat generously: Sprinkle the rub evenly over all sides of your meat. Don't be shy!
- Massage it in: Use your hands to firmly rub and press the seasoning into the meat. Ensure good, even coverage for maximum flavor.
- Rest the Meat:
- Short rest (smaller cuts): For items like steaks or chops, let the rub sit for at least 30 minutes at room temperature before cooking. This allows the flavors to meld.
- Longer rest (larger cuts): For big cuts like brisket or pork shoulder, consider refrigerating overnight. This lets the flavors penetrate deeper. Just be mindful not to leave it on too long, as the salt could start to draw out too much moisture from the meat.
- Cook:
- Grilling/Smoking: Dry rubs truly shine with these methods, helping to form that delicious, flavorful crust (often called "bark") during cooking.
- Other methods: You can also successfully use this dry rub for pan-searing, baking, or broiling to add great flavor.
